Diabetic Safe Recipe: Ziti With Meat Sauce

Here is a great recipe I tried today. I got it out of Diabetic Living Magazine.

Use 95% lean ground beef in this recipe – this will keep it low fat and low cal.ziti-with-meat-sauce
Prep time 20 – 30 mins
Cook time : 25 mins
Makes 8 servings

Per serving: 297 cal, 7 grams of fat, 46 mg chol, 464 mg sodium, 36g carb, 3 g fiber, 22 protien
Exchanges: 2 starch 1 vegatable, 2 lean meat, carb choices 2.5

Ingredients:
1 lb lean ground beef
2 cups shredded carrots
2 10 3/4 oz cans reduced fat & reduced sodium condensed tomato soup
2 1/2 cups water
8 oz dried cut whole wheat ziti pasta
2 tbsp snipped fresh basil OR w tsp dried basil crushed
1 tsp onion powder
1 tsp garlic powder
1 cup shredded part skim mozzarella cheese
1/4 cup shredded Parmesan cheese

STEP 1: In 4 quarter Dutch oven, cook ground beef and carrots until meat is brown. Drain off fat. Stir in soup, the water, pasta, dried basil (if using), onion powder and garlic powder.

STEP 2: Bring to boiling, reduce heat. Cover and simmer about 25 mins or until pasta is tender, stirring occasionally. Stir in fresh basil (if using) and mozzarella cheese. Sprinkle each serving with Parmesan cheese.

This recipe was quick and easy to make. I love recipes that I can make basically all in one pan. Quick and easy to make, great to eat and not a headache to clean up later! Bon appetite!
