Chocolate Chip Cookies for the Diabetic

Make some diabetic friendly chocolate chip cookies with nuts and raisins that are healthier and tasty too. These cookies are 110 calories, 12mg of calcium and contain 14g of carbohydrates.

Chocolate chip cookies

What you’ll need

2 eggs

1 1/2 Whole Wheat pastry floor

1 cup of whole oats (ground)

1 cup packed light brown sugar

1 cup of raisins

1 cup of walnuts (chopped)

1 cup bittersweet chocolate chips

1 cup non-hydrogenated margarine

1/2 cup granulated sugar

1/3 cup cocoa powder

1 tbsp vanilla extract

1 tsp baking soda

1/2 tsp salt (optional)


Preheat the oven at 350 degrees

Mix flour, oats, cocoa, baking soda and salt (optional). In another add margarine, both brown sugar and granulated sugar, eggs, and vanilla beat with an electric mixer until smooth. Add flour mixture, chocolate chips, raisins and walnuts. Scoop teaspoon sizes onto a cookie sheet and bake for 10 minutes or until brown.
